5-10 Fresh Lemons (preferably organic, as you will be using the skins).
Instructions
1. Prep the LemonsWash the lemons thoroughly to remove any wax or residue. Dry them completely with a towel.
2. Peel the ZestUsing a vegetable peeler or a zester, remove the yellow part of the skin.Important: Try to avoid the white part (the pith) underneath the yellow skin, as it is very bitter.
3. Dry the PeelsYou have two easy methods:Oven Method (Fastest): Place the peels in a single layer on a baking sheet. Put them in the oven at the lowest possible temperature (usually around 150°F / 65°C) for 1–2 hours. They are ready when they feel brittle and snap easily.Air Dry Method: Leave the peels on a plate in a dry, well-ventilated area for 2–4 days until they are completely hardened.
4. Grind into PowderOnce the peels are 100% dry, place them in a clean spice grinder, coffee grinder, or a high-speed blender. Pulse until they turn into a fine, bright yellow powder.
5. StorageStore the powder in an airtight glass jar in a cool, dark place. It will stay fresh and potent for up to 6 months.How to Use ItFor your Cloud Cake: Add ½ tsp to the dry ingredients for a fresh aroma.For your Pot Roast: Use it as a dry rub on the beef or sprinkle it over the potatoes for a “Lemon-Herb” finish.For Drinks: Stir a pinch into tea or sparkling water.
