1 ½ lbs boneless chicken breasts
2 cups red grapes

3 large garlic cloves, peeled and smashed
¼ cup apple cider vinegar
1 teaspoon fresh lemon juice
1 cup chicken broth
1 teaspoon Herbs de Provence (or Italian seasoning)
2 bay leaves
3–4 sprigs fresh thyme
2 tablespoons extra virgin olive oil
Coarse salt and fresh ground black pepper

Instructions
Preheat oven to 425°F.
Heat 1 tablespoon of olive oil in a large pan or Dutch oven over medium-high heat.
Pat the chicken breasts dry with a paper towel, then season generously with salt and pepper.

Once the oil is shimmering, add the chicken to the pan. Sear each side until golden brown, about 3-5 minutes. Remove the chicken from the pan and set aside.
Add half of the apple cider vinegar to the same pan to deglaze, scraping up any browned bits.
Stir in the remaining olive oil, then add the diced onion and smashed garlic cloves. Cook for 4-5 minutes until softened.
Pour in the rest of the apple cider vinegar, chicken broth, and lemon juice. Stir in Herbs de Provence, bay leaves, and fresh thyme. Simmer on medium-low for 3-4 minutes.

Return the chicken breasts to the pan, then arrange grapes, figs, and thyme sprigs around the chicken. Cover the pan and transfer to the oven.
Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F. Let rest for 5 minutes.
Optional: For a crispier texture, remove the cover and broil for an additional 2-3 minutes.

Garnish with fresh thyme leaves and serve with your favorite side dish.
