Crock Pot Pepper Steak
Ingredients:
● 1 ½ lbs flank steak, sliced into thin strips
● 1 bell pepper, sliced (any color)
● 1 onion, sliced
● 2 cloves garlic, minced
● 1 cup beef broth
● ¼ cup soy sauce
● 2 tablespoons cornstarch
● 2 tablespoons vegetable oil
● ½ teaspoon black pepper
● ½ teaspoon salt
● Cooked rice, for serving
Instructions:
In a skillet, heat vegetable oil over medium-high heat.
Brown the flank steak strips for about 3-4 minutes, then transfer to the crock pot.
Add the sliced bell pepper, onion, and minced garlic to the crock pot.
In a bowl, whisk together beef broth, soy sauce, cornstarch, black pepper, and salt.
Pour the mixture over the steak and vegetables in the crock pot.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Serve hot over cooked rice.
