Creamy Cucumber & Egg Salad

Ingredients:

3 small cucumbers

1 small carrot

1 tomato

1/4 small red onion

1 tbsp vinegar

4 tbsp mayonnaise

1 tbsp honey

2 hard-boiled eggs

Instructions:

Prep the Veggies:

Slice the cucumbers into thin rounds. Grate the carrot (or peel into ribbons) and dice the tomato.

Finely slice the red onion into thin strips.

Make the Dressing:

In a small bowl, whisk together the mayonnaise, vinegar, and honey until the dressing is smooth and creamy.

Mix: In a large salad bowl, combine the cucumbers, carrots, tomato, and onion. Pour the dressing over the vegetables and toss gently to coat.

Add the Eggs:

Peel the hard-boiled eggs and cut them into quarters or slices.

Place them on top of the salad right before serving so they stay intact.
