Cranberry & Spinach Stuffed Turkey Breasts with Goat Cheese
Ingredients:
4 turkey breast cutlets (about ½-inch thick)
1 cup fresh spinach leaves
½ cup dried cranberries
4 oz goat cheese, softened
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and freshly ground black pepper, to taste
1 tbsp fresh thyme or rosemary, chopped (optional)
Directions:
Preheat oven: Set to 375°F (190°C). Lightly grease a baking dish with olive oil.
Prepare turkey: Lay out turkey cutlets. Season both sides with garlic powder, paprika, salt, and pepper.
Stuff: Spread a layer of goat cheese on each cutlet, then add spinach and cranberries. Roll up tightly and secure with toothpicks.
Sear: Heat olive oil in a skillet over medium-high heat. Sear stuffed turkey on all sides until golden brown.
Bake: Transfer to the baking dish and bake 20–25 minutes, or until internal temperature reaches 165°F (74°C).
Finish: Garnish with fresh thyme or rosemary. Remove toothpicks before serving.
