Ingredients:
Digestive biscuits – 200 gButter (melted) – 100 gCream cheese – 600 gSugar – 200 gWhipping cream – 200 mlEggs – 3All-purpose flour – 1 tbspVanilla essence – 1 tsp
Instructions:
1. Finely crush the digestive biscuits and mix with melted butter. Press firmly into the base of a springform pan.
2. Beat the cream cheese with sugar, flour, and vanilla until smooth and creamy.
3. Add the eggs one at a time, mixing gently after each addition, then mix in the whipping cream.
4. Pour the batter over the prepared base and smooth the top.
5. Bake at 160°C (320°F) for 50–60 minutes, until just set.
6. Let it cool completely, then refrigerate for at least 4 hours.
7. Serve plain or with red berry jam or sauce.
