Ingredients
1 large prime rib steak
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon fresh rosemary, chopped
1 teaspoon thyme
4 asparagus spears
3 large potatoes, peeled and cubed
3 tablespoons butter
1/3 cup heavy cream
Instructions
Remove the steak from the refrigerator 30 minutes before cooking.
Mix olive oil, salt, black pepper, garlic powder, rosemary, and thyme. Rub the mixture all over the steak.
Boil the potatoes in salted water for 15–20 minutes until tender. Drain well.
Mash the potatoes with butter and heavy cream until smooth. Season with salt and pepper to taste.
Heat a skillet over medium-high heat. Sear the steak for 4–5 minutes per side for medium-rare (adjust cooking time to your preference).
Let the steak rest for 5–10 minutes before slicing.
While the steak rests, sauté or grill the asparagus for 3–4 minutes until tender-crisp.
Serve the prime rib steak with mashed potatoes and asparagus.
