This savory-sweet jam is perfect for burgers, cheese boards, or spread onto fresh whole wheat bread.
Ingredients
- Red Onions: 1 kg (about 4 large onions), thinly sliced.
- Olive Oil: 2 tablespoons.
- Brown Sugar: 1/2 cup (adds sweetness and helps caramelization).
- Balsamic Vinegar: 1/2 cup (for tanginess).
- Salt & Black Pepper: To taste.
- Optional: A sprig of fresh thyme or rosemary.
Instructions
1. Sauté the Onions
Heat the olive oil in a large pan over medium heat. Add the sliced red onions and a pinch of salt. Cook slowly for about 20 minutes, stirring occasionally, until the onions are very soft and starting to turn golden.
2. Add Sweetener and Acidity
Stir in the brown sugar and balsamic vinegar. If you are using herbs like thyme, add them now.
3. Simmer and Reduce
Turn the heat down to low. Let the mixture simmer for another 20–30 minutes. The liquid should reduce and thicken until it reaches a dark, syrupy, jam-like consistency.
4. Seasoning
Taste and add more salt or pepper if needed. Remove any herb sprigs.
5. Storage
Let it cool completely. Transfer to a clean glass jar. It can be stored in the refrigerator for up to 2 weeks.
