Instructions:
Prepare the Chicken:
Cut the chicken into bite-sized pieces.In a bowl, mix honey, lime juice, and a bit of garlic or soy sauce to create a glaze.
Sauté the chicken in a pan until cooked through and the glaze becomes thick and caramelized.
Prepare the Rice and Avocado:Cook your white rice until tender.Slice the avocados into thin, even pieces.
Assemble the Stack:
Use a circular mold or a small bowl to shape the cooked rice into a base.Place a layer of sliced avocado on top of the rice.Add the warm honey-lime chicken on top of the avocado.
Garnish:
Top the stack with fresh cilantro, diced chili, and a squeeze of fresh lime juice.Serve with extra lime wedges on the side.
Cooking Tip: To make the rice stay in a “stack” shape, press it down firmly into the mold while it is still warm.
